Dinner Time

Baked Fishsticks

Tonight I wanted to create a healthy version of a not so healthy dish that my very picky kids, well kid, would be totally into. Colbie eats just about everything. My husband and I ate them up in a matter of minutes but unfortanetly both kids were not into the meal whatsoever, but they really are never into dinner. The recipe came from one of my favorite websites ourbestbites.com. The recipe included:

1lb of white fish (cod, halibut, or tilapia) *I used cod
1 egg scrambled
1/2 cup of panko bread crumbs
1/2 cup of plain bread crumbs
salt/pepper to taste
6tbs of flour

1) Set oven to 450 and coat a pan with rims with cooking spray.
2) Cut fish into thin strips
3) Dunk fish in flour, coat, dunk into egg, then dunk into bread crumb mixture
4) Bake in oven for 10 minutes or golden brown.

Baked Zucchini


The baked zucchini was also a hit by my husband and myself. I enjoyed it because it was like having a fried treat but not so filling and greasy tasting. I know that is the whole point of having fried foods but at my ripe age my body cannot handle all that nasty fat, which lately I have been a fan off and has helped me avoid all situations as such. The zucchini was crispy on the outside and juicy on the inside, yummy! I got the baked zucchini recipe from skinnytaste.com, one website that has become a favorite! In all my recipes I have altered the ingredients to either suit my vegetarian needs or my husbands strange diet of no peppers whatsoever, no tomatoes, spicy... can't even name everything it would take up  a whole page. So hard to cook for because that is everything I love! So minus pepper and paprika here it goes, also I'm sure a very tasty marinara sauce. Ingredients include:


3 medium zucchinis (cut length wise twice and then in half)
1/2 cup whole wheat Italian Bread Crumbs
1/2 cup panko bread crumbs
1 large egg white
1tbs grated parmesan


1) Preheat oven to 425 and spray one baking sheet
2) Dunk zucchini in egg white, then in bread crumb/parmesan mixture
3) Spread on sheet in a single layer and spray a coat of cooking spray on top of zucchini
4) Bake for 20-25 minutes.

Kale




This dish is a weekly routine in my house, my husband and I love it so much. I actually got the idea from Guys Big Bite on the food network channel but had to cut out what probably is the best parts of this dish. In his version he saute`d the kale in bacon grease and added oven roasted beets, I love beets, my husband loves bacon but... I'm vegetarian and he can't eat beets so it became a simple quick dish that is super tasty and lets not forget healthy. Kale has the same nutrients as spinach but unlike spinach keeps all it's nutrients when cooked, so I've heard, I'm not nutritionist (though thinking I should become one, I have a love for food and fitness). Recipe includes:

~1tbs of olive oil
~1tbs of butter
2 bunches of kale
Dash of Kosher Salt

1) Clean Kale and get leafs of of stems
2) Melt butter/olive oil in large skillet
3) Saute` kale and add salt until wilted and a little brown




The Beginning

So this is where everything crazy in my life begins! October 14th, 2007 I married my very handsome husband Keegan! We had a very few, very romantic couple of months and found out I was pregnant with our son in February and that we were due October 13th, pretty funny. That is when my life truly changed for the good and I became a mom, now my full time profession. It wasn't long, a year and 1 month later that we were pregnant again and this time with a girl. Before all this my life consisted of gardening, working out, going out, and going to school. Now my life consist of cooking, cleaning, bathing, feeding, changing diapers, trying to keep up with my fitness, and oh yeah cleaning up after and feeding three dogs! Lets not forget somewhere squeezed in there is trying to spend "adult time" with my husband. Because I have no time to socialize with any adults, I have fallen victim to posting and checking facebook throughout the day. I have become annoyed with all my posting about children and recipes on facebook myself so decided to start this blog to keep track of all those cute, and not so cute things my children do throughout the day and my excitement over finding a new recipe, you know the things only true stay at home moms would be excited about. That was cute me then before children a whole 108 pounds, this is me and my family now:
