Cream Cheese Butter Cream Frosting
If you know me well you know that I love to bake cupcakes and I'm always looking for something new. So far the only frosting that has been successful for me is a chocolate frosting and a cream cheese frosting. The other day I came across this recipe for a cream cheese butter cream frosting and it looked super easy with very few ingredients, both are a plus! I am always looking for a good reason to bake cupcakes and having a few friends over for drinks and appetizers was a perfect opportunity. If I just bake them for the fam I will eat all of them on my own, or my husband will complain that I am just trying to make him fat and unattractive to other women, yikes! I am also trying to master the art of decorating and so far I am not that great at it:
I added fresh lemon juice and zest to my frosting because I love lemon! The ingredients are:
1 C (2 sticks) room temperature unsalted Butter
1/4 tsp salt
4 oz cream cheese
4 C powdered sugar
1 tsp vanilla
2-3 TBS heavy cream
1) With an electric mixer beat butter, salt and cream cheese until completely smooth.
2) One cup at a time add 2 cups powdered sugar, beating after each addition.
3) Add vanilla and 1 tablespoon heavy cream and beat.
4) Add the remaining 2 cups of powdered sugar again one cup at a time.
5) Add an additional 1-2 tablespoons heavy cream beating until frosting is smooth and fluffy.
It tastes great and is perfect for decorating!
