Healthy Snacks

Frozen Yogurt Strawberries

Today I went crazy shopping and decided that I wanted to make something simple and delicious that the kiddies would enjoy. They love strawberries, yogurt, and what kid doesn't enjoy ice cream. So what am I making... frozen yogurt covered strawberries. It is very simple, easy, and exactly what it sounds like.

Cut stems off of strawberries, dip in yogurt, put on large sheet and stick in freezer! Another plus is I have something left over to put into my new compost bin!

Banana Oatmeal Bars

One day I was looking around on the Internet for a good, healthy oatmeal bar recipe and came across this one on the Modern Gal. I have made them a couple times and just love them as a mid morning snack. My baby enjoys them as well and they too are easy! I am a runner and am always looking for a way to add some healthy carbohydrates to my diet and something that will keep my energy up throughout the day until I finally have a chance to squeeze in a night run. The ingredients include:

2 C Rolled Oats
2 Bananas
1/2 C unsweetened Coconut
1/2 C chopped walnuts
1 tsp Cinnamon
1 tsp Pumpkin Spice (or Allspice)
1/4 C applesauce 

Preheat oven to 350. Mash the bananas until no lumps then mix in all ingredients.

Pour mix in a 9 x 9 baking dish and bake for 30 minutes. Cut into bars then refrigerate. Enjoy!

They might look ugly but they are scrumptious!
