Macaroni and cheese is an all time favorite in this house, who doesn't love it? We all love the cheesy goodness but the thought off all the grease sitting in my stomach does make me sick. After consuming a large bowl of this comfort food rolling around in sweats is a must. Although sometimes rolling around in comfortable clothing sounds appealing, I would rather do it weighing 10 pounds less, at least what feels like 10 pounds less, so I went in search of a yummy mac and cheese recipe. Who came to my rescue, non other than skinnytaste.com, thank you Gina! This is the second time I've made this recipe and we all love it.
Here are all the ingredients you will need:
Of course like always my recipe does not contain all the ingredients from the original recipe, such as pepper and onions.
12 oz whole wheat macaroni
12 oz broccoli florets
2 TBS butter
1/4 C flour
1 C vegetable broth
2 C Cheddar cheese
2 C milk
Parmesan cheese
Panko bread crumbs
1) Preheat oven to 350, spray a baking dish with cooking spray.
2) Boil noodles and broccoli together according to package minus 2 minutes.
3) In a medium sauce pan melt butter, and cook until golden brown. Add flour and whisk until clumpy. Slowly add milk and vegetable broth whisking until mix begins to boil. Simmer for 5 minutes until sauce thickens. Remove from heat and add cheese, mix until melted.
4) Drain pasta and broccoli, pour back into pot and mix with cheese sauce.
5) Pour into baking dish, sprinkle with parmesan cheese and panko bread crumbs. Spray top with cooking spray.
6) Bake for 15-20 minutes and an broil for an additional 2 minutes.
